Mint Chocolate Chip Trifle
This is a delicious recipe that me, my mom, and my sister (Princess Cowgirl) came up with, using a recipe for a pie filling that we loved.
Ingredients
- 1 box (16 ounces) angel food cake mix
- 1/2 cup unsweetened cocoa
- 2 cups whipping cream
- 2 tablespoons confectioners' sugar
- 2 cups cold milk
- 2 teaspoons peppermint extract
- 8 drops green food coloring
- 2 packages (3.4 ounces each) instant vanilla pudding mix
- 1 1/2 cups miniature semisweet chocolate chips, divided
- 1 jar (16 ounces) dark chocolate hot fudge sauce
Directions
- Combine cocoa and cake mix, then follow package directions to mix and bake cake. Let cake cool then cut into 1 inch cubes. Set aside.
- In a small mixing bowl, beat cream and sugar until soft peaks form. In a large bowl, combine the milk, extract and food coloring. Add pudding mixes and beat for 2 minutes or until thickened. Fold in cream mixture and 1 cup chocolate chips. Heat hot fudge sauce in microwave 1 minute or until pourable.
- In a 3 qt. trifle bowl layer 1/3 cake cubes, mash down lightly. Pour 1/4 hot fudge sauce over cake. Spoon 1/3 mint mixture over cake cubes. Repeat twice, ending with mint mixture. Make a shallow well in top of mint mixture and pour remaining fudge sauce in it. Sprinkle with remaining 1/2 cup chocolate chips.
- Refrigerate until serving. Serves 16
